Red Lentil and Vegetable Soup

I made this for dinner tonight, and it is delicious. The kids gobbled it up! Give it a try and make sure you use red lentils-YUM!

Hey, I found your blog off of Holly's and I just love your recipes. I really want to try this lentil soup. I could always use more fiber.
